Jollibee is giving its Christmas dessert lineup a Dubai chocolate-inspired twist through a collaboration with Filipino pastry chef Nouel Catis.

Available nationwide from October 16 to December 31, 2026, the limited-edition Pistachio Choco Sundae combines Jollibee’s vanilla soft serve with a pistachio shell, chocolate syrup, and diced pistachios. The dessert is priced at ₱79 in-store, according to the launch announcement, and can be ordered for dine-in, takeout, drive-thru, and participating delivery services. The collaboration brings the pistachio-and-chocolate pairing associated with the viral Dubai chocolate phenomenon into one of Jollibee’s most familiar dessert formats.

Catis is a Dubai-based Filipino pastry chef who helped develop the original pistachio-kunafa chocolate associated with FIX Dessert Chocolatier, working with founder Sarah Hamouda on the confection that later became a global social-media phenomenon. That distinction matters: while some reports call him the “creator” of Dubai chocolate, the confection emerged through a collaboration rather than from one person alone. Since then, Catis has built his own confectionery work around chocolate, pistachio, kunafa, and other flavor combinations, while also collaborating with restaurants in Manila. His Jollibee project is especially personal, as he said he grew up loving the Filipino fast-food brand and never expected to eventually work with it.

For Jollibee, the sundae is positioned as a seasonal way to introduce an internationally familiar flavor trend while highlighting Filipino culinary talent.

Jollibee Philippines vice president for marketing Dorothy Ching said the partnership allows the brand to offer something new for Christmas while celebrating Filipino creativity on a global stage. One thing diners should note is that delivery-app pricing may be higher than the announced ₱79 store price: current Foodpanda listings checked in several Philippine branches show the Pistachio Choco Sundae at ₱95, so final prices can vary depending on branch and ordering platform.
